Fried banana and egg yolk omelette
This was a favourite #blw food with Flynn and now with flo! Nutritiously dense and delicious, easy to pick up and soft to eat. This is appropriate from 6 months once you have introduced egg yolk.
Coconut oil is high in lauric acid which is immune fighting and also has a high smoke point which makes it the best oil to fry with without releasing toxic fumes and harmful free radicals (ghee is also great).
I also added nut butter (which is optional) to increase the healthy fats (which will help the body absorb the fat soluble nutrients) and the nut butter is a great source of protein and calcium!

To reduce waste I add the egg whites to my eggs and make myself scrambled eggs or an omelette for breakfast or can add to smoothies!
