Pumpkin Pie Smoothie

This smoothie is so delicious and the perfect way of sneaking some extra vegetables into yours and your Childs diet! Pumpkin is a great first food for baby, so you can ‘kill two birds with one stone’ and cook some pumpkin for your baby, and with the leftovers use to make yourself a smoothie, or add to salads, serve with dinner etc.

Recipe

  1. Cut up an organic butternut pumpkin into big wedges and coated in coconut oil and organic cinnamon and baked at 180 until soft (about 45 mins)

  2. Allow to cool

  3. For the smoothie add 1/2 cup cooled pumpkin, 1 frozen banana, 1 cup almond or coconut milk, 1 tsp MCT oil (optional), 1 cup ice, 1 tsp cinnamon and 1 serving vanilla protein powder (optional) and 1 serving collagen (optional).

  4. Blend and enjoy
